Hey all you mamas(or really anyone!!) out there, I just have to share with you this amazing thing I just made!
First, if you have me on Instagram, you know I am working diligently for a healthier self. Part of this is because I don’t fit into ANY of my clothes…part of it is because our family has a team with the Mayor’s Fitness Challenge and I want to win!(I honestly don’t care about winning, but my kids do!) Going along with being healthier, I’ve been trying to eat foods that are better for my body, while not eating less or falling back into any bad habits.
About a year ago, my oldest, Dynamite, was doing one of the exercise programs that came along with a meal plan. One of the meals was tuna fish mixed with avocado instead of mayonnaise. Upon seeing this, I was intrigued and insisted on trying chicken salad and egg salad like this. I was hooked! Avocados are one of my favorite foods and while I love my mayonnaise, I don’t make my own and like other processed foods, I just want to cut back a bit on it.
I perfected the avocado egg salad this week and I just have to share it with you. Heads up, for my faint of taste friends, it’s a bit spicy. But it is oh so good!! And for my other “fit moms” out there, this is a quick one to make if you prep eggs ahead of time. (Which I do! I do a lot of prep for each week so I can stay on track. I often snap about it, follow me on snapchat at @renewinglj)

What you’ll need:
-1 TBS of cilantro
-1/2 TBS of minced garlic
-1 TBS of chopped jalapeños.
And to make it?
-Cut the avocado in half and put the insides into a bowl.
-Peel the eggs and add them to the bowl. (I used the yolks too, but you can free to take those out if you wish.)
-Add in the garlic, jalapeños and cilantro. Personally I just pulled the cilantro leaves off, but you can chop it up as much as you wish.
-Then mash, mash, mash!
I personally threw this on a wrap with lettuce and tomatoes to eat this for lunch today. I also added a little salt and pepper over the top. You can put it on whatever you want. I had a little more than half leftover, which I’m almost too excited to eat. If you guys try this let me know!
